(MAKES 4 BOWLS OF CHILI OR 8 CHILI DOGS)

  • 1 pound ground beef (or 1/2 pound pork and 1/2 pound beef if you prefer)
  • 1 cup diced white onion
  • 2 cloves garlic, minced
  • 1-1/2 tablespoons chili powder
  • 1-1/2 teaspoons kosher salt, more or less to taste
  • 1 teaspoon ground cumin
  • 3/4 teaspoon paprika
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon freshly ground black pepper
  • a few shakes of cayenne pepper
  • a pinch or two of sugar
  • 1 (15 ounce) can tomato puree
  • 2 to 3 tablespoons yellow prepared mustard (to taste)

For heartier chili

add 15 oz can of Red Kidney Bean rinsed  


For Vegetarian (Two Versions)

Substitute tofu for beef (pan sear in sunflower oil for 2 min.s)

And a 15 oz can of Red Kidney Beans

For Bean Chili add 15 oz can each of Red Kidney Bean, Norther Beans, and Black Beans


  • To Make Chili Dogs (aka Detroit Coney Dogs)
  • 1 package (of 8) hot dogs with natural casing 
  • 1 package (of 8) hot dog buns
  • yellow mustard, for serving
  • finely diced white onion, for serving

Chili Fries (Aka Detroit Coney Fries)

Desired amount of Fries

Top with Chili

Cheddar Cheese 

Yellow Mustard

Finely diced white onion
